Wood Pigeon Recipes

Woodpigeon can be substituted in for either pheasant or partridge recipes, or indeed chicken. With the benefit of no closed season it can be purchased at game dealers and butchers all year round. Tastiest in the Summer when they have the highest concentration of berries and seed in their diet.
